My first taste of “ant egg” tacos at restaurante Los Murales. Escamoles are the larvae harvested from the roots of the agave or maguey plant. Escamoles are often referred as “insect caviar” and considered a delicacy, and have a cottage cheese like texture and taste slightly nutty. Along with the usual condiments such a fresh guacamole, finely chopped onions, cilantro and jalapeño, the tacos were “muy sabroso.”
